Soup season is one of my favorites! As soon as the cold air comes, I take my pot or slow cooker and start cooking. I particularly like broth-based soups (as opposed to cream-based ones). These soups fill me up without a lot of fat, carbohydrates or calories, making them the perfect meal for losing weight or eating healthier.

  • Worcestershire sauce it’s my secret ingredient every time I use ground turkey in a recipe. Gives a deep level of meaty flavor.
  • peppers put the pepper in the stuffed pepper soup. Any pepper color is fine, so use a variety of red, yellow, or green peppers.
  • The beef soup gives the base a rich flavor, but chicken broth or vegetable broth will do as well.
  • Tomato sauce and diced tomatoes add flavor and texture to the soup base.
  • Minute brown rice adds volume to the soup recipe.

Cooking tips

  • Substitute with other meats. You can use lean ground beef, ground pork, or even sausage in place of ground turkey. Of course, keep in mind that this will increase the saturated fat and calories in the recipe. Also, you may need to drain the fat before adding the other ingredients. Or, if you want to keep it low in fat, try ground chicken instead of turkey.
  • Use cooked brown rice instead of instant rice. I like using instant brown rice to make this recipe easy, especially if I don’t have cooked brown rice available. However, if I cooked the brown rice in the refrigerator or freezer, I will make the soup without the instant rice. Then I’ll put the cooked brown rice in a bowl and pour the soup over it. You can always cook long grain rice in advance to be ready for soup and other recipes.
  • Leave the rice out to cut down on carbs in this recipe. Cauliflower rice is another low-carb option.
  • Refill the vegetables. This is a great recipe for using the leftover vegetables you have in the refrigerator.
  • Sprinkle with some grated cheese. Parmesan, mozzarella or even chopped cheddar are delicious.

How to make stuffed pepper soup

  • Start by heating the olive oil in a Dutch oven or large saucepan on the stove over medium-high heat. Then add the turkey and cook until it is no longer pink.
  • Then add the onion powder, garlic powder, Italian seasoning, salt, pepper and Worcestershire sauce.
  • Next, add the peppers with the ground turkey mixture and cook for about 3-5 minutes or softened.
  • Pour in the beef broth, tomato sauce and diced tomatoes. Bring to a boil and then simmer for about 30 minutes.

  • Stir in the rice and cook until the rice is cooked and the peppers are tender for about 10 minutes.

How to cook stuffed pepper soup in the slow cooker

  1. Making stuffed pepper soup in the crockpot is easy
  2. Start by cooking the turkey and peppers according to the directions on the hob.
  3. After the turkey and green peppers are done cooking, add them to the slow cooker insert.
  4. Pour in the tomato sauce, diced tomatoes and 2 cups of beef broth. Since this is a slow cooker recipe, you will need less liquid.
  5. Cook for 4-6 hours over low heat.
  6. Add the rice in the last 1/2 hour. When the rice is tender, the soup is ready!

Storage tips

Self there are leftovers, then you are in luck as this soup gets better by the day!

  • After the soup has cooled, pour it into bowls or glass containers and store it in the refrigerator for up to 5 days. I love using these 2 cup pyrex glass bowls for portion control.
  • You can also freeze this stuffed pepper soup. After it has cooled, pour it into the plastic or glass containers and freeze. Make sure you leave about an inch from the top for expansion.   • Stir in the rice and cook until the rice is cooked and the peppers are tender, about 10 minutes.
