You’ll love this easy pork tenderloin wrapped in crispy bacon and cooked in the air fryer, just two ingredients not counting salt and pepper. I tried this recipe several times to make sure it was perfect before sharing it. My daughter smelled the bacon-wrapped meat and came running – she ate almost half the batch! This pork tenderloin is so juicy and moist. The tenderloin is a lean cut of pork, so it benefits from the fat in the bacon. I use center cut bacon, which is leaner than the other cuts since it is cut from the belly. If you want to serve it with something sweet, it would be great with apricot jam or sweet chili sauce on the side.

At what temperature should I cook the pork tenderloin?

Cook the pork tenderloin at 400F degrees in the air fryer for ten minutes. Then turn the meat over and cook for eight to ten minutes until the internal temperature reaches 145-150 degrees.

How to wrap meat in bacon?

To wrap the pork in bacon, you’ll need kitchen twine, but toothpicks would work too if that’s all you have.

  • Cut two strips of bacon in half and lay two halves next to each other, then four whole strips and then the other two halves.
  • Place the fillet on top of the bacon.
  • Roll the pork jelly roll tightly, starting with one long side.
  • Tie the roast at 2-inch intervals with kitchen string to prevent the bacon from shrinking and falling out, each about 12 inches long.

  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon Ground black pepper
  • 1 pork tenderloin, about 1 1/2 lbs
  • 6 bacon cut in the center
  • kitchen twine
  • Season the pork with salt and pepper. Place the bacon on a cutting board so that it is approximately the same size as the fillet.

  • Cut two strips of bacon in half (since the ends are thinner, they don’t need a whole strip). Place two halves next to each other, then four whole strips, then the other two halves next to each other.

  • Carefully place the fillet on the bacon. Roll the pork jelly roll tightly, starting with one long side. Tie the roast at 2-inch intervals with kitchen twine about 12 inches long.

  • Carefully cut the fillet in half to fit the fryer.

  • Place the tenderloin inside and fry at 400 F for 20 minutes turning halfway, until an instant-read thermometer inserted in the center reads 145-150 F. Let the pork rest about 5 minutes before slicing. Cut into 12 slices.
